Classic Lemon Bundt Cake
Whisk together the flour, baking soda, salt

And lemon zest and set aside

Add the butter and sugar to large mixing bowl

And mix 4-5 min until light and fluffy

And then mix in the eggs one at a time

Then the vanilla and the lemon juice

Add the flour and yoghurt in alternating them ending with flour

Until fully incorporated scraping down the sides of the bowl

Pour into prepared pan - make sure to grease very well- I dusted this one with a little too much flour this time & had to help it out of the pan a bit

Smooth out batter and give it a few good taps on the counter to make sure the batter has no air pockets or large voids

Then bake until golden

In the meantime make your lemon simple syrup - mix sugar & lemon juice together - heat in the microwave for 15-20 seconds to dissolve and set aside

The make glaze - mix together powdered sugar with lemon juice until smooth

Remove cake from oven and allow to cool in pan 10 minutes

Flip over on to cooling rack

Remove the pan - brush with glaze all over while cake is still warm then allow to cool completely

Then spoon or pour over the icing

Slice and enjoy!
