Coconut Shrimp
Peel shrimp, leave shell on tail. Pat dry. In small bowl toss shrimp, 1/4tsp salt & 1/8 tsp pepper.

Create 3 trays: 1st with 1/2 c. Flour; 2nd - blend 2 eggs & 1Tbsp milk;

3rd - mix 1/2c Panko breadcrumbs, 3/4c sweet coconut flakes & zest of 1 lime

Dip shrimp in flour then into egg mixture. Next press shrimp into the coconut and Panko mix.

Place shrimp on air fryer trays leaving center of tray empty.

Place trays in the center and bottom positions in air fryer.

Select the bake setting. Set timer for 8 min. Half way through cook time switch tray positions.

Serve with Dipping Sauce of 1/2c apricot preserves, 1-1/2Tbsp lime juice, 1/4tsp red chili flakes
