Copycat Girl Scout Samoas Cookies (Vegan & Gluten Free)
These healthy homemade samoas come together with mashed banana, shredded coconut, melted dairy free chocolate, and coconut oil👉
Mash 1 cup very ripe banana in a medium sized bowl👉

Stir in 1 cup shredded coconut👉

Mix until combined👉

Using your hands, form small balls then flatten into discs. Place on prepared baking sheet and repeat👉

To create a small hole in the center of each cookie, use a chopstick or your finger. Bake at 350F for 20-25 mins. Once cooked, let cool completely👉

Melt 1/4 cup vegan chocolate chips then stir in 1/2 teaspoon coconut oil👉

Drizzle over each cookie then transfer to the refrigerator to let set. Enjoy!
