Creamy Butternut Squash Pasta
Sauté butternut squash and onion in olive oil, over medium high heat.

Add garlic and salt & pepper -stir. Then add the butter and chicken broth, and bring to a boil.

Meanwhile, cook fettuccine pasta in a pot of salty boiling water. Cook to al dente.

Cook squash until for tender.

Spoon squash mixture into large blender, let cool a bit, and then purée until smooth.

Pour contents of blender back into the stock pot. Add nutmeg, Parmesan cheese and stir until melted. Then add in a bit of half and half plus s&p.

Add in the cooked pasta and combine well.

Serve butternut squash pasta with some extra parm! Enjoy!
