In a stand mixer on medium speed, cream together the sugar and unsalted butter.

The sugar- butter mixture should look like this when combined

Add 4 large eggs and vanilla extract

Scrape down the mixing paddle, if needed and continue mixing until evenly combined

In a large mixing bowl, whisk together all-purpose flour, baking powder and kosher salt until combined

In the stand mixer, on low speed, add the flour mixture gradually, 1 cup at a time, to the sugar-egg mixture as mix until combined

The sugar cookie dough should look like this when it’s done mixing

Wrap the dough up in an airtight container or plastic and refrigerate for 1 hour or overnight.

Divide the dough into 4 parts and work with 1 quarter at a time

Flour a surface (like a pastry mat)

Roll out each quarter at a time, on the floured surface 1/8-1/4 inch thick

Make the cookie cutouts

Roll out more cookies with the trimmings. You might want to chill the dough so it’s easier to work with

Place the cookie cutouts on a silicone mat lined rimmed baking sheet about 1 inch spaced apart

Bake for 6-8 minutes in a 400 degree (200 degrees Celsius) preheated oven.

When the cookies are done baking, allow them to cool on the baking sheet for 5 minutes before transferring them fo a wire cooling rack

Transfer the cookies to the wire cooling rack & allow to cool completely
