Whisk together 2 pounds yogurt 1 tbsp sugar 2 tsp salt 1 ½ tsp red chilli powder 1 to 1 ½ tsp cumin powder

Grind 1 cup ma’ash/urad (drained) ¼ teaspoon baking soda ½ teaspoon cumin powder ½ teaspoon red chilli powder ½ teaspoon salt and 1/4-1/3 cup water

Your batter will be like this - for extra fluffy ones whisk well

Fry each fritter for 2-3 minutes on each side at medium heat or until golden

Soak in lightly salted water

Gently squeeze out the water

Place in your dish

Top with yogurt and let sit for few hours

Garnish with your favorite condiments (imli chutney, green chutney or chaat masala)
