So, first measure your DF spread, sugar & vanilla into bowl

Mix until combined & smooth

Add your whole egg plus one yolk

And add your flour too

Mix until it’s just coming together

Take it out of the bowl and bring it together with a little knead

Tuck it into a cling film blanket and pop it in the fridge for 30mins ish

Preheat the oven to 180c

Clean down your surfaces

Line some baking sheets with grease proof paper

There are only 3 of us so we’ve used half the mix...

...and tucked the rest back into it’s blanket to put in the freezer for another day

*someone* was a bit heavy handed with the flour (!) but now we roll out to about 4mm ish thick

Now cut your shapes, you can re-roll a couple of times to get lots of biccies out of the mix

On to the baking sheet. Sprinkle them with icing/granulated sugar if you like, we don’t tend to!

Cook for 10mins ish (you might need to turn the tray to get them even) then out onto a cooling rack
