Dark Chocolate Ganache Applied Three Ways

Melted Ganache: dip cupcakes in ganache, let excess drip a few seconds, return upwards.

Cooled Ganache: place dallop on top of cupcake. Spread to edges. Smooth sides. Level top.

Whipped Ganache: whip on high speed with hand mixer for 2 minutes until ganache lightens in color.
