Make a well in the middle of the dry ingredients

Add the Egg Yolks

Mix the wet ingredients then start incorporating the dry into the wet

In a separate bowl - mix the egg white to soft peaks

Add the egg whites into batter in two batches

Fold them into the batter

Fold in the chocolate (optional)

Grease your iron and add the batter 1/3-1/2 cup at a time
