Date And Almond Cookies
Cream together 1/2cup of softened butter and 3/4cup coconut sugar

Add 1egg, 1tsp vanilla essence and mix well

Add dry ingredients: 1.5cups flour, 1tbsp cornstarch, 1/2tsp baking soda and 1/4tsp salt

Sieve through the dry ingredients
Mix dry and wet ingredients together

Form into cookie batter
Fold in 1/2cup chopped medjool dates and 1/4cup chopped almonds

Using a tablespoon measure make small balls of cookie batter

Makes about 24 cookie balls. Place them on a lined tray
Refrigerate for 30mins

30mins later, keep the cookie dough balls apart on a baking tray and bake at 325F for 12mins

Allow to cool onto a cooking rack

Done and ready to enjoy!! A Crunchy Cookie on the outside and chewy on the inside!
