Delicious Smooth Vegan Mayonnaise (gram Flour Mayo)
Ingredients; 50 g. gram flour - 1 Tbsp mustard - 2 Tbsp lemon juice - salt - 50 ml. olive oil - 100 ml. Neutral plant based oil
Slowly add 225 ml. water to 50 g. of sieved gram flour, while whisking.
Leave the smooth liquid batter to rest for minimum 30 minutes
Bring the mixture to the boil, and simmer for 10 minutes while stirring continuously. - leave the thickened batter to cool down in the fridge.
Once cooled, blend in the lemon juice, mustard and salt with a hand blender
Slowly start adding the 100 ml. Neutral plant based oil (sunflower or linseed). Add about a Tablespoon at a time.
Add the 50 ml. of olive oil by hand. Use a spatula to mix in the olive oil bit by bit.
Taste and season to your liking. Add more salt, lemon juice or mustard...
Et voilá, a smooth mayonnaise which can keep in the fridge for up to a month
Transform this Mayo into a aiöli (adding crushed garlic) , or into a tartare sauce (adding chopped capers, gurkens, dill, parsley, lemon juice)
