Dolly Parton’s 5-Layer Dinner (in the Instant Pot)
Add a pound of ground beef and a medium sliced onion to the insert pot.
Use the Sauté function function to cook, breaking apart the beef as it browns.
Once the beef is cooked through and onions are softened, drain the excess grease and set the beef and onions aside on a plate.
Wipe out the insert pot and add sliced russet potatoes to the bottom of the pot.
Sprinkle with 1 tsp Montreal steak seasoning.
Top the potatoes with beef and onions.
Over the beef, layer a 15-oz can diced tomatoes, a chopped bell pepper, 1 tsp Montreal steak seasoning, and 1/4 tsp ground thyme.
Pour 1/2 cup beef broth over everything. Close the lid and cook at high pressure for 4 minutes.
After a quick pressure release, stir everything gently. Don’t worry if some of the potatoes break apart.
If desired, add a cornstarch slurry to thicken the liquid. It’s not the prettiest dish, but it sure is tasty!
You can also serve topped with shredded mozzarella cheese!
