Double Chocolate Zucchini Muffins
Line muffin tins with cupcake papers (or spray with nonstick cooking spray).

Add sugar, oil, eggs, and coffee to a mixing bowl, and beat until well combined.

Add cocoa powder, salt, baking soda, and cinnamon. Mix on low speed.

Add flour, and mix on low speed until just a little white remains.

Add zucchini and mix, again on low speed.

Add chocolate chips, and mix just until distributed.

Use a muffin scoop to add batter to each muffin paper.

Once all batter is added, bake at 350 degrees for 20-23 minutes.

Cool on a wire rack, then enjoy. Store 2-3 days on the counter in a container or freeze.
