Melt the butter.

Set aside to cool.

Use a hand mixer to purée the over-ripe bananas.

Add the wet ingredients (egg, buttermilk, vanilla, and cooled butter). Whisk.

Add the brown sugar, baking soda, baking powder, salt, and cinnamon. Whisk again.

Add flour and stir with a spoon. Don’t over-mix. Some lumps are ok.

Add chocolate chips or nuts. Optional! Reserve a few for the tops.

Spoon muffin batter into tins lined with paper. Add the reserved chips to the tops. Bake at 400 degrees for 16-19 mins, or until done.

Remove the muffins from the oven. Test with toothpick.

Remove muffins to cooling rack and enjoy! 🤗
