Fry the onion garlic & ginger in the butter & oil over a low heat

Cook for around 10 minutes until the onions are soft

Add the curry paste & tomato purée & cook for 1 minute

Tip the mixture into a food processor & blitz until it becomes a paste

Fry the chicken in a little oil until browned

Add the onion paste back to the pan with the chicken stock & tomatoes

Stir together then bring to a boil & simmer for 4 minutes

Add the spinach one handful at a time & stir in until it has wilted
