Easy Guacamole & Chickpea Sweet Potatoes
Slice 4 sweet potatoes down the middle & bake at 190 C for 45 minutes

Wash & skin 200g of chickpeas & add to a large bowl

Add 1 tablespoon of olive oil

Season with a little salt & pepper

Add 1/2 teaspoon of cumin

Add 1 teaspoon of garlic powder

Add 2 tablespoons of tahini

Stir to combine

Line a baking tray with parchment paper, spread the chickpeas & bake for 25 minutes

Evenly fill the sweet potatoes with the guacamole & roasted chickpea mixture
