Blitz ginger snaps in food processor (can also use graham crackers)

Until fine crumbs

Mix crumbs with butter

Empty into a 9 inch tart pan

Press it into pan firmly and then bake

Mix yolks until thick and lighter in colour

Mix in the condensed milk

Mix in half the lime juice then the cream of tartar and then the remaining lime juice

Pour filling into cooled tart shell

And bake 10-15 minutes until set

Allow to cool to room temperature and then refrigerate 2 hours

Decorate - a simple dusting of powdered sugar or lime slices & whip cream are perfect too

You can make this tart with lemons instead of limes too
