Easy Oil-Free Herb Roasted Fingerlings

Slice 2lb. fingerling potatoes in half.
Mix 1/4C veggie stock, 2T poultry seasoning, 1t parsley, 1t chives, 1t garlic, 2T salt, 1/2t pepper.
Add the herb-stock mixture to the potatoes and stir to coat.
Arrange on a parchment-lined baking sheet and bake at 400 for 25-30 minutes, stirring halfway.
When the potatoes are soft and start to turn brown, they are done.
Serve, and enjoy!
