Easy Pan Seared Scallops & Spring Mix Salad
What you'll need
6 to 8 pieces
Scallops
To taste
Salt & Pepper
Half an onion, finely chopped
Onion
2 Tablespoons
Irish Butter

1 Tablespoon, Balsamic Vinaigrette Dressing
2 Cups
Baby Spring Mix
1/2 cup
Sunflower Sprouts
1/2 teaspoon
Herbes De Provence
Dust scallops with salt and pepper.

Melt your butter in medium heat.

Pan sear scallops on both sides until golden brown on both sides. About 6-8 minutes total.

Set scallops aside.

Tip: Perfect cooked temperature of scallops is between 125 to 130 degrees.

Caramelize onions from same pan as scallops. Take off heat and finish off with 1 Tablespoon Butter.

Add salt & pepper (a dash of each) and Herbes de Provence.

Add 1 Tablespoon of Balsamic Vinaigrette Dressing (recipe in my IG post, @adashofangel ) and toss.

Plate the onions, scallops and drizzle some butter. Add your salad.

Garnish with caramelized onions, sunflower sprouts and drizzle with some dressing. Enjoy!!!
