Easy Skillet Chilaquiles
Heat Oil in a medium size skillet

Add onions, sweet pepper, garlic and spices - cook 7 to 9 minutes, stirring, until vegetables are softened

then stir in the Chipotle peppers and crushed tomatoes

Simmer 5-10 min until reduced then stir in the shredded chicken and cook until heated through

Stir in the tortilla chips - store bought or homemade

Top with all your favorite toppings and serve with extra tortilla chips
