Ingredients: olive oil, onions, mushrooms, garlic, fire roasted tomatoes, chicken broth, spaghetti, spinach, Parmesan cheese, shrimp, salt and pepper.

Sauté onions and mushrooms in olive oil until translucent, then add garlic and sauté until fragrant.

Stir in tomatoes, chicken broth and spaghetti. Push the pasta down so it is emerged in the liquid.

Cover and cook for 7-8 minutes until pasta is almost al dente. Stir in spinach and Parmesan.

Let pasta rest until all the liquid is absorbed.

While the pasta rests, sauté the shrimp, garlic, salt and pepper in olive oil.

Cook until the shrimp is pink and opaque. About 2-3 minutes on each side.

Serve shrimp over pasta and enjoy!
