Soak 200g rice noodles in boiling water for 10 minutes, drain and rinse with cold water.

Add a splash of oil to the wok and 4 crushed cloves of garlic.

Pop in 2 chopped carrots and 6 chopped spring onions.

Pour in 3 tbsp dark soy sauce & 3 tbsp light soy sauce.

Add in 2 tsp brown sugar and stir well.

4 tbsp pickled turnips (optional).

Push everything to one side, pour in 1 cup warm water and the noodles.

Add 4 tbsp crushed peanuts.

Add in browned chunks of firm tofu (400g).

Squeeze in the juice of 1 lime (around 2 tbsp). Use a lime squeezer for ease!

Pop in 300g of beansprouts and stir well for one minute.
