Egg Pancake Variation with Blueberry Topping

10" Cast Iron Skillet

Preheat Oven to 425 degrees.

Crack two eggs into a bowl.

Add 1 tsp. Vanilla.

Mix in 1/4 cup milk.

Mix until smooth to advoid any lumps.

Oops! I should have added 1/4 cup sugar with the flour!

All smooth! Pampered not Perfect!

Melt two tablespoons of butter in the hot cast iron pan.

Pour the batter into the cast iron pan and bake for 20-25 minutes.

Take it out of the oven when the center is no longer runny.

To make the blueberry topping, I mixed some frozen blueberries with some sugar to taste.

Simmer on the stove until it is syrupy.

Pour on top of the egg pancake. Enjoy!
