Filipino Ube Cheese Cupcakes

Whisk 2 cups flour, 2 tsp baking powder, 1/2 tsp salt in a bowl. Then set aside.

Mix 1/2 cup coconut oil and 1/2 cup brown sugar.

Add eggs, one a time (2 eggs are needed for this recipe)

Add 250 ml chilled condensed milk, 1 cup grated cheddar cheese, 1 tsp vanilla

Then add 1 tbsp calamansi or lemon juice and 1/2 cup desiccated coconut

Slowly add the dry ingredients into the bowl of wet ingredients. Then mix.

Mix until combined but do not overmix

Divide the batter into 2. Then add 1 tbsp Ube Paste and 1 tbsp CRV Ube Powder to a batter. Then mix.

Scoop cheese batter first then ube batter in a cupcake liner

Use skewer or toothpick to swirl the batter. Then bake at 180C for 20 mins
