Preheat a cast iron skillet or pan over medium heat. Add oil and potatoes of choice.

Cook until fully cooked.

Crack 12 eggs into a bowl and whisk to scramble.

Scramble your eggs in a nonstick skillet by moving the eggs around the pan with a spatula.

Cook the eggs until fully cooked.

Cook the bacon until crispy, drain on paper towels and cut into small pieces.

Add the cooked bacon and the cooked potatoes to the eggs.

Mix to combine.

Warm the tortillas over an open flame or microwave for 20 seconds in a wet paper towel to soften.

Assemble the burritos by filling with 1/2 cup egg mixture and top with shredded cheddar cheese.

This will make around 8 burritos.

You can also freeze the egg mixture into cubes for a freezer breakfast bowl.

Grab 12 inch pieces of foil. Roll the burritos in the foil.

Write the reheating directions on a freezer bag and place the burritos into the bag. Freeze.

When you are ready to reheat remove from foil, wrap in a wet paper towel and microwave for 1.5 min.
