Season your chicken. I used Three Onion Rub and olive oil.

Slice a large onion. Separate into rings.

Heat two tablespoons of butter in a 10" cast iron skillet

Saute onions on medium heat until browned and carmelized.

Remove onions and keep warm after carmelizing.

Cook chicken, browning each side. Remove from skillet.

Grate about a half cup fresh parmesan

Measure one cup beef broth.

After chicken is cooked, remove and add onions back to skillet. Mix in three tablespoons of flour.

Make a roux with flour and onions. Cook for about three minutes.

Add the cup of beef broth, stir until thickened.

Add chicken to skillet, spoon onion mixture over chicken, add swiss cheese and parmesan

Broil until the cheese is melted. Enjoy!
