French Onion Soup With Homemade Stock
Melt 1 stick of butter in a large Dutch oven. Saute 4 lbs sliced sweet onions until the onions are nicely browned.

It takes about 20 minutes.

Add 2 tbsp all-purpose flour + salt to taste & Stir to mix in.

Add 2 quarts beef stock (2liters) Homemade is best. Stir to mix. Bring to a boil.

Add 1/2 cup dry Sherry (118ml). Turn the heat down & simmer an additional 45 minutes. Cover the pot with lid.

Add the soup to a bowl or soup crock. Top with a piece of thick-sliced Italian bread.

Top each serving w/ 2 ounces (45g) of shredded gruyere cheese. Place under the broiler until the cheese has melted & is bubbly & lightly browned.
