Fresh Pea Soup (Potage Saint-Germain)
Heat oil and butter and sauté leeks and onions until softened and sweet

Add broth - chicken or vegetable

Add fresh shelled peas or frozen plus fresh or frozen spinach

Simmer until peas are tender, remove from heat, season with S&P and carefully purée in batches

Stir in the creme fraiche or sour cream and the chives or your choice of fresh herbs and serve

Serve with an extra dollop of creme fraiche and some crusty bread or homemade buttery croutons

Can be served hot or chilled
