Fried Tomatoes with Corn Salsa
Slice tomatoes into 1/2” slices

Dip each tomato into the flour, then the egg, then the breadcrumbs

They should look like this

Make the corn salsa by stirring all the salsa ingredients together in a bowl

Fry the tomatoes for 1-2 minutes per side or until golden brown

Use kitchen tongs to flip them

Remove and place on a towel-lined plate

Assemble! Top tomatoes with the corn salsa
