Peel & shred approximately 2 lbs carrots (I had just a little over 820 grams)
Into a pot add the carrots, 1 cup milk, 1/2 cup cream (I used milk Pak) & 1 cup sugar. Mix well
Bring to a boil. Partially cover lid and let simmer on low for around 40 mins. Keep stirring on and off to avoid burning
If the khoya you’ll use isn’t sweet (mine wasn’t), add another cup of sugar (check taste later to add more if you need). Mix till water dries
Optional step : add in seeds from 4-6 green cardamoms. Mix.
Add in 200 grams unsweetened khoya / mawa. Mix very well till all is fully incorporated. The khoya will eventually melt and dissolve into the halwa.
Add 1/2 cup ghee.Bhoono for 10ish mins.You can add some food color here.When ghee starts to come up, & desired color is achieved, it’s ready.
Gajar ka Halwa tiyaar hai. Garnish with nuts and serve warm, as is or with cream.
