Garlic Roasted Vegetable Pesto Pasta
Chop all your veggies and place on 1 large sheetpan or split between 2 (you don’t want to over crowd them)

Add onions and garlic - season with salt and pepper and toss with 2-3 tablespoons of olive oil - spread veggies out in pan evenly

And then roast tossing veggies and rotating pan halfway through

until tender with golden caramelized edges

Make pesto: Place kale/ spinach in food processor

Along with the basil

Garlic, lemon juice Parmesan cheese, & pine nuts or almonds

Season with salt and pepper

Process until everything is finely chopped or ground

Scraping down the sides halfway

Drizzle in the olive oil while processing

Continue to process until you reach the consistency you like

Toss the veggies with cooked pasta and pesto
