Garlic Sweet Potato Fries with Spicy Aioli
Soak 1/4C cashews in boiling water.

Slice two sweet potatoes into matchsticks.

Mix 2T nutritional yeast, 2t dried oregano, 2t freeze dried garlic, 1t smoked paprika, and 2t salt.

Add the spices to the sweet potatoes and stir to coat.

Arrange the sweet potatoes on a parchment-lined pan. Bake at 450 for 40-50 minutes. Stir halfway.

Add cashews, 2T dijon, 2T tahini, 1T lemon juice, 1t garlic, and 1/2t cayenne to a food processor.

Process, adding 4-6T non-dairy milk until smooth.

Arrange the fries on a plate and enjoy with aioli.
