Gluten Free "Cuppa" Peach Cobbler

Place butter in baking dish and heat in a 400F oven til just sizzling, about 5 mins

Add flour, coconut sugar, coconut milk, baking soda, cream of tartar, and vanilla to a bowl

Stir or whisk to make a smooth batter

Remove dish with melted butter from oven. Don't let the butter scorch!

Pour batter into the hot dish with melted butter. Don't stir it. Press peaches into the top.

Bake for 25 mins and check for doneness

The edges should be browned and a little crispy when it is done

Serve warm with a scoop of vanilla ice cream (I used coconut milk ice cream for dairy-free)
