Gluten Free Vegan Blueberry Muffins
Get your ingredients ready to go and preheat the oven to 200C or 400F. Grease 5-7 muffin holes

Add the vinegar to the plant milk to form a buttermilk

Mix the baking powder and soda into the flour

Add the wet ingredients to a large mixing bowl

This includes the vegan buttermilk, vegan blueberry yoghurt, vegan butter and the light brown sugar

Whisk to combine

Add the flour mixture to the wet ingredients

Whisk until combined and fluffy

Add the blueberries to the batter, reserving some for topping the muffins

Gently fold the mixture to incorporate the blueberries

Decant the muffin batter into the greased muffin holes

Top with remaining blueberries

And some finishing sugar, if you like

Place the muffins in the oven for 25 minutes or until browned on top and cooked through
