Gluten-free Irish Soda Bread
If you like a rustic loaf with a thick, crusty exterior and hearty interior, this bread recipe is a winner. It’s perfect for dunking in soup and stew.

Gather and prep your ingredients.

Add 4 cups gluten-free flour, 2 tsp baking soda, 2 tsp caraway seeds, and 1 tsp salt to a large bowl. (Add xanthan gum if not in your flour blend.)

Whisk the dry ingredients together.

Cut 4 tbls cold, diced butter into the flour mix with a pastry cutter, fork, or your fingers.

Whisk together 1 egg and 1 3/4 cups buttermilk in a medium bowl.

Create a well in the dry ingredients.

Slowly add the buttermilk mixture to the dry ingredients while mixing.

Mix together the ingredients until a loose ball forms.

Sprinkle a cutting board with flour. Knead the dough a few times, then form a round loaf.

Cut a cross in the top of the loaf, taking care not to cut completely through the loaf.

Place the loaf in a cast iron skillet, and bake in a preheated 400 F oven for 55-60 minutes.

Irish Soda Bread stays fresh in an airtight container at room temp for 3-4 days. It also freezes well.
