Gluten-Free Vegan Chocolate Cake
Mix together all the ingredients for the cake batter.

Transfer into two baking tins lined with baking paper. Bake in the oven for 15 minutes, until an inserted skewer comes out clean.

Transfer onto a wire rack to cool completely before applying the frosting.

To make the frosting: place the cooked sweet potatoes, cocoa powder, vanilla, salt, maple syrup + coconut oil in a food processor.

Whizz until completely smooth.

Place one of the sponges on a plate or cake stand and spread less than half the frosting over it.

Place the other sponge on top and spread the remaining frosting over the top + around the sides of the cake.
