Gluten-Free Vegan Christmas Fruit Cake
Place chopped dried fruits, walnuts and spices in a bowl and cover with sherry. Soak for 24 hours.

Mix together with all the other ingredients for the cake batter.

Transfer into a springform baking tin lined with baking paper.

Bake in the oven for 30 minutes, until an inserted skewer comes out clean.

Leave to cool on a wire rack before applying the frosting.

Spread the frosting around the top and sides of the cake.

Decorate as desired.
