Gluten-Free Vegan Coffee Cake
Mix together all the ingredients for the crumble topping. Place in the fridge to firm up while you prepare the rest of the cake.

Mix together the cinnamon and coconut sugar.

Mix together all the ingredients for the cake batter.

Transfer one half into a square baking tin lined with baking paper.

Use a spoon to sprinkle the cinnamon sugar across the surface of the cake batter. Don’t go too close to the edges!

Carefully spread the remaining cake batter over the cinnamon sugar.

Remove the crumble topping mixture from the fridge and use your fingers to crumble it over the top of the cake batter.

Bake in the oven for around 20 minutes, until an inserted skewer comes out clean. Leave to cool before slicing into squares.
