Gluten-Free Vegan Homemade Oreos
Mix together all the ingredients for the cookie dough in a bowl.

Use a rolling pin to roll out the dough - do this between two sheets of baking paper as it’s very sticky!

Cut out cookies using a circular cookie cutter - roll out the dough a few times until you use it all up.

Transfer these onto a baking tray lined with baking paper.

If you wish, use a smaller cookie cutter with a different shape to make a small indent in the surface of the cookies to make a pattern.

Bake in the oven for 20 minutes until firm to the touch. Leave to cool completely.

Place the cashew nuts, cacao butter, maple syrup + vanilla in a food processor.

Whizz until completely smooth.

Use a knife to spread 1 teaspoon of the cream in the centre of the cookies and sandwich together.
