Gluten-Free Vegan Tiramisu
Mix together all the ingredients for the sponge batter in a bowl.

Transfer into a square baking tin lined with baking paper.

Bake in the oven for 15 minutes and leave to cool.

Cut into rectangles. Slice each rectangle in half horizontally.

Lay out half of the sponge rectangles along the bottom of a baking dish.

Spoon over the coffee and alcohol mixture until completely absorbed.

Spread over half of the vegan mascarpone. Repeat for the second layer using the remaining sponge rectangles, coffee mixture and mascarpone.

Cover with a fine dusting of cocoa powder.
