Good Culture Citrus Cottage Cheesecake
What you'll need
3/4 cup
Coconut Flour
1/3 cup
Ghee
1/2 cup + 1 tbsp
Maple Syrup

Good Culture Whole Milk Cottage Cheese
8 oz
Cream Cheese (softened)

Tangelos Or Navel Oranges
Let’s make the crust! Add 3/4 cup coconut flour to a mixing bowl. Add 1/4 cup ghee, butter or coconut oil. Add 1 tbsp maple syrup.

Add 2 whole eggs to your mixing bowl. Mix together until crust forms a crumbly dough.

Add a sheet of parchment paper to a spring foam pan or cake pan. Press the dough firmly & evenly all around the tin.

Bake at 350 degrees for 10-12 min or until crust is lightly golden. Remove and let cool. While crust is baking, add your cottage cheese to mixer.

Using a mixer beat cottage cheese on high until it reaches a smooth and creamy consistency 5-7 min. Add 8 oz softened cream cheese and incorporate.

Once the mixture is mostly lump free; add 1/2 cup maple syrup, 2 eggs, and the juice of one blood orange and one navel orange. Mix to incorporate.

Add half of filling to your pre baked pie crust. Bake at 350 degrees for 45 min. Filling will be enough for 2 cheesecakes.

Remove from oven after 45 min. The edges of the cheesecake will be firm but the middle still jiggly. Let cool. Used leftover filling for cupcakes.

Time to decorate!slice your other two oranges and top!

Let chill for at least 4 hours in fridge! Great source of protein and gluten free!
