Greek Style Kleftiko Lamb (slow Roasted With Potatoes)
Marinade/rub: fresh herbs, garlic, lemon zest, mustard, olive oil

Score fatty part of the lamb - optional

Slather rub all over lamb

Season with salt & pepper -and marinate 1-4 hours or overnight (refrigerated)

Line bottom of pan with parchment (optional) place veggies in roasting pan starting with potatoes

Sliced peppers, tomatoes

Olives and capers

Salt & pepper, lemon juice, olive oil and water, broth or white wine (go for the wine for extra flavour)

Place lamb over veggies and nestle in the garlic & squeezed lemon halves

Cover with one layer parchment

Then foil tucking edges in to seal off tightly - or use a roasting pan with lid

Roast for 2 1/2 - 23/4 hours or until fall off the bone tender

Remove the covering

and roast at high temp for 15-20 min more or until deeply golden
