Greek White Bean Soup (Fasolada)
What is Fasolada?
Warm olive oil in a large pot over medium-high heat. Sauté onions for 5-7 minutes until translucent.

Add salt, pepper, garlic, carrots, and celery. Sauté for another 5 minutes.

Add tomatoes, tomato paste, and beans. Stir to combine.

Add in bay leaves and broth. Stir to combine. Raise heat and bring to a boil. Cover. Lower heat to simmer for 20 minutes.

Remove bay leaves. Adjust seasonings to taste.

Ladle into bowls and serve. Optional garnish ideas: fresh dill, parsley, Greek yogurt, Feta cheese.
