Grilled Lemon-Tarragon Shrimp Kabobs
1 pound, peeled and deveined
Raw Shrimp (16/20)
1/4 cup, chopped
Fresh Tarragon
2 cloves, minced
Garlic Cloves
1/2 cup
Extra Virgin Olive Oil

Mustard
zest and juice of 1
Lemon
1/2 teaspoon
Chili Flakes
1 teaspoon
Sumac or Coriander
1/2 teaspoon
Kosher Salt
1/2 teaspoon
Black Pepper
Whisk together tarragon, mustard, garlic, lemon zest, chili flakes, sumac, salt & pepper.

Pat shrimp dry. Toss in mixture to coat. Refrigerate and marinate for 30 minutes to 3 hours.

Skewer shrimp. Prepare grill for medium heat and oil grates.

Grill 3-5 minutes covered.

Flip and grill covered for 3-5 more minutes.

Finish with a squeeze of lemon. Garnish with additional chopped tarragon.
