In a skillet with olive oil, add chopped onion and green bell pepper, then sauté for 6 to 8 minutes on medium/high heat.
Add garlic, then stir and continue cooking for 2 minutes.
Add tomato purée, thyme, clove, bay leaf, hot peppers and precooked red kidney beans. Mix, cover, and simmer for 10 minutes on low to medium heat.
Add rice, épis, salt, pepper and water. Stir, then bring to a boil on high heat.
Stir in butter, then cover and cook on low heat for 20 minutes.
Turn off the heat, and let stand for 10 minutes. Then stir rice before serving.
