Ham & Cheese Frittata + Caramelized Shallots

Prepare your ingredients before you begin.
Whisk eggs, heavy cream, salt & pepper together. Stir in Gruyere cheese. Set aside.
Melt butter in an oven-proof pan or skillet. Add shallots & cook, stirring often, until caramelized.
Spread shallots out, then pour egg mix over them. Cook 1-2 minutes, pulling set egg away from edges.
Sprinkle ham over the eggs.
Transfer to oven & bake at 350F for 12-15 minutes. Frittata will still jiggle in center until cool.
