Cook the macaroni in salted water according to the package directions.

Drain macaroni, transfer to a big mixing bowl, and let cool for 10 minutes.

In the meantime, grate the onion and carrot.

Add the onion, pickle relish, and pickle juice into the macaroni.

Add half of the mayonnaise, a dash of salt, pepper, and mix until combined. Cover and let chill.

When ready to serve, add in remaining mayonnaise and shredded carrots. Season with salt and pepper.
