Heat your oven to 400. Place broccoli florets in a steamer basket and set over boiling water. Cook until just tender and bright green, about 5 min

Heat oil in a medium pan on medium/high heat. Cook onion and garlic until golden brown

In a small pot, whisk almond milk with paprika, ground mustard, salt, and nutmeg. Bring to a boil

Whisk cornstarch with almond milk.

Add the cornstarch mixture to boiling milk mixture stirring constantly. Boil until thickened and coats the back of a spoon

Add onion mixture to the thickened sauce

Pour the sauce over the steamed broccoli and stir to coat. Stir in cheddar cheese and transfer to a baking dish

Heat a pan to medium high heat and toast panko until golden brown

Sprinkle toasted panko onto the broccoli mixture. Bake for 25-30 minutes until bubbly
