Healthy Cookie Rocks
In a bowl, combine the coconut oil, egg, honey and vanilla extract into a liquid mixture and set aside.
In a large bowl add the oats, flour, baking powder, cinnamon and salt, and whisk them.
Pour the liquid mixture from the first step and mix them all together until you have a sticky mixture.
Add the dried cranberries and chocolate chips, fold everything together and refrigerate for 30 minutes.
Scoop small chunks of the mixture, roll them into balls and place them on a baking tray covered with a parchment paper.
Bake in a preheated oven at 180ºC for about 10 minutes and enjoy!
