Healthy Mint Chocolate Frosting (Vegan & Paleo)
Scoop out the inside of 1/2 a large avocado (ripe) into a small bowl

Add 1 tsp cacao or unsweetened cocoa powder

Add 1 tsp vanilla extract

Add 1 tsp peppermint extract

Whisk well until all lumps are removed and the frosting is smooth

Add 1 tbsp coconut sugar to sweeten

Whisk again until completely smooth

Store in fridge for 15-30 minutes to chill

Use to frost desserts like my Mint Chocolate Brownie Donuts, or enjoy frosting by itself as mint chocolate mousse!
